3 DELICIOUS VALENTINES DAY VEGAN DESSERT IDEAS

Are you a big valentine's fan? With Valentine's Day right around the corner, it's the perfect time to share our favorite vegan recipes that you'll absolutely love. Whether you’re celebrating with a partner, friends, or enjoying some self love, these plant based treats will satisfy your sweet tooth while keeping things cruelty free. From rich pastries to pink heart shaped delights, these three vegan dessert ideas are easy to make, full of flavor, and perfect for sharing.
Pink Valentines Day Vegan Sugar Cookies
2 tbsp flax seed meal 2 tbsp unsweetened almond milk
4 tbsp hot water 1 tbsp softened vegan butter
½ cup melted vegan butter 1 teaspoon vanilla
1 cup of sugar 2 drops red food coloring
1 teaspoon vanilla 2 drops red food coloring
1 tablespoon almond milk 3-4 drops red food coloring
1 teaspoon baking powder
¼ teaspoon salt
1 ¼ cup of all purpose flour
Directions:

Preheat the oven to 425. Mix flax seed meal and hot water together to make flax egg

Sit for 2 minutes until a thick gel forms

Mix melted vegan butter, flax eggs, sugar, baking powder, vanilla, almond milk, and salt
-
Add the regular or gluten free all purpose flour until a thick dough forms
-
Line a baking sheet with parchment paper. Then roll a tbsp of dough in a ball and place onto the baking sheet

Put each ball onto baking sheet and bake for 9-10 minutes
-
Then use mixer to mix almond milk, vegan butter, powdered sugar, and vanilla together to make the frosting
Strawberry Vegan Mini Pop Tarts
1 cup strawberries ⅔ cup coconut butter
3 tablespoon maple syrup 1 teaspoon coconut oil
1 tablespoon chia seeds 1 drop pink food coloring
1 ½ cup almond flour 1 tablespoon vegan butter
1 cup tapioca flour 3 tablespoon coconut oil
4 -5 tablespoon cold water
Directions:

Place strawberry pieces in mixing bowl with 1 tbsp maple syrup

Mash strawberries to extract some juice with a fork

Add chia seeds to the bowl and stir. Set the bowl aside so chia seeds can soak up the juices
-
For dough, whisk the almond and tapioca flour in a large bowl. Then add 4 tbsp of cold water and solid coconut oil
-
Stir until small clumps form and add 2 tbsp maple syrup and continue to mix until a large ball of dough forms

Place ball of dough on parchment paper and roll the dough out to ½ inch in thickness

Use a heart shaped cookie cutter to slice the dough and bake in oven for 20 minutes
Vegan Valentines Rocky Road
200g of dairy free white chocolate 50g freeze dried raspberries
200g of dairy free dark chocolate 50g vegan white marshmallows
2 tablespoons of golden syrup 100g mini vegan marshmallows
40g dairy free butter 200g pink wafer biscuits
Directions:

Line a 9×9 baking tin with a grease proof paper

Place dairy-free white and dark chocolates, golden syrup and dairy-free butter in a bowl
-
Then place the bowl over a saucepan filled with water. Set on medium heat, stir until the mixture has melted
-
Remove from heat and allow to cool for 10 minutes then cut up wafer biscuits in small chunks and place in a mixing bowl with marshmallows and raspberries

Pour chocolate mixture and use spatula to stir together then spoon the mixture in the tin and press the mixture to compact it

Place in freezer for an hour and once firm, remove from the tin

Then cut into squares and serve
