HIGH PROTEIN VEGAN MEALS TO MAKE FOR BREAKFAST

Do you eat the same breakfast daily and want to spice things up? Starting your day with a high protein vegan meal is a game changer for energy, focus, and overall health. From savory to sweet, there are endless vegan based options to fuel your morning the right way. These 3 high protein vegan breakfast meals are not only super quick and easy to make but are delicious and packed with protein!

Vegan Tofu Breakfast Burrito


Ingredients:

Tofu, Potato, Beans, Avocado, Peppers, Salsa, Cilantro, Taco Seasoning, Large Tortillas


Directions:

-Add 2 tbsp oil to a pan over medium heat. Add chopped potatoes and cook for 5 minutes. Then add chopped pepper and cook 4-6 minutes

- Add black beans and 1 tbsp taco seasoning and stir. Then cook for a couple minutes and remove from heat and set aside. Using the same pan, add 1 tbsp oil, crumble in the tofu, and add taco seasoning

-Cook for 5 minutes and add a little water to let tofu soak

-Then assemble potato mixture, tofu, avocado, salsa and cilantro onto the lower half of a tortilla

-Fold edges over and pull the bottom layer over the filling, pressing down. Roll upwards and serve


Peanut Butter Chia Overnight Oats


Ingredients: 

3/4 cup rolled oats, 2 tbsp chia seeds, 1/2 tsp cinnamon, sea salt, 1 cup unsweetened vanilla almond milk, 1/2 cup filtered water, 1 banana, 2 tbsp PB fit powder + 1 1/2 tbsp water, 1–2 tbsp maple syrup


Directions:

-Add oats, chia seeds, cinnamon and sea salt to a mason jar and mix. Add in almond milk, water, vanilla and mashed banana

-Stir until combined, then In a bowl, mix PB powder with water, until creamy. Stir “peanut butter” mixture into mason jar

-Refrigerate overnight or at least 4 hours and enjoy


Chickpea Avocado Toast


Ingredients: 

4-6 slices of your favorite bread, 1 ripe avocado, chili paste, salt and pepper, cups cooked chickpeas, 2 tbsp olive oil, 1 tsp ground cumin, 2 tsp smoked paprika, ½ tsp hot chili powder


Directions:

-Place chickpeas in a colander for a few minutes to drain. If you cooked the chickpeas yourself, let them cool down before pan roasting them

-Mix spices together with a few pinches of salt in a small bowl and heat up the pan on a medium heat. Pour 2 tbsp of olive oil on the pan

-Put chickpeas into hot oil and stir. Sprinkle chickpeas with spices and stir the spices in. Turn heat off but keep roasting chickpeas until coated

-Then take off the heat and set aside. Toast the bread and slice avocado and spread it on the toast. Top with spiced chickpeas and radish sprouts
