Sweet summer time, the weather is warm and the living is easy. It’s time to relax and a break from the hard work of the day. Even on our lazy days, we should strive to fuel our bodies with the best ingredients and nutrients. What better way to do so than with a salad? All you have to do is chop, toss, and eat to be on your way to a fast, nutritious, and easy meal. Try this recipe for a Citrus Kale Salad to supply yourself with something healthful, even on those days where you just want to kick back and relax!
Citrus Kale Salad
Serves 4
Ingredients for the salad:
-1 head of rinsed and chopped kale
-1/2 of a finely chopped red onion
-3/4 cup of dried cranberries
-3/4 cup of chopped almonds (or any nut you prefer)
Ingredients for the dressing:
-1/2 cup of extra virgin olive oil
-3 tablespoons of lemon juice
-3 tablespoons of orange juice
-a splash of champagne vinegar (red wine vinegar or apple cider work as well)
-2 teaspoons of Dijon mustard
-1 teaspoon of salt
-1 teaspoon of pepper
In a large mixing bowl whisk together the ingredients for the citrus dressing until the liquids are emulsified and mixed. Toss in the ingredients for the salad and using your hands, massage the kale to help break down the fibers making it a more pleasing texture. Serve immediately or store in the refrigerator for up to a week!
